1 tbsp veg oil
2 chopped carrots
2 sliced leeks, white part only
1 chicken breast, cut into chunks
2 potatoes, peeled and chopped
2 peeled, chopped parsnips
Heat oil in pan, add carrots and leeks, saute until soft (about 6 minutes).
Add chicken and saute, turning occasionally, til seared, but not browned.
Add potatoes and parsnips, just cover with boiling water.
Cover and simmer 15 minutes, or til everything is tender and cooked through.
Blend to a puree, or leave chopped for older babies.
