Another of our family’s favourite Christmas time baked goods are ginger molasses cookies. The soft kind, not hard and crunchy like gingerbread men. Think Starbucks and a coffee, latte, hot chocolate, or just a glass of milk to go with it. So yum.

Soft Ginger Molasses Cookies

 

3/4 cup butter, softened

1 cup brown sugar

1/4 cup molasses

1 egg

2 1/4 cups flour

2 teaspoons baking soda

1/2 teaspoon salt

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon cloves

 Cream butter, sugar, molasses and egg together.

In a separate bowl, whisk together flour, baking soda, salt and spices.

Gradually add together and mix.

Roll into balls 1-2 inches and roll in icing sugar. Place on a parchment lined cookie sheet.

Bake @ 375 degrees F for 8-10 minutes. Eat warm or allow to cool.

These spread out on their own without you having to flatten them after putting on the tray.

Absolutely DELICIOUS, and VERY hard to keep around for long ;0)
