1 cp water
1 tbsp olive oil
1/4 tsp salt
2/3 cp couscous
1 lemon
1/4 cup crumbled feta cheese
3 tbsp chopped fresh mint
1 green onion, thinly sliced (opt)

Bring a medium sized pot of water to a boil with oil and salt. Remove from heat, stir in couscous. Cover for 5 minutes.

Finely grate 1 tsp lemon peel. Using a fork, fluff couscous. If serving warm, stir in remaining ingredients including peel. If serving at room temp, cool, then stir in remaining ingredients including peel. Squeeze a bit of lemon juice over top and stir. Add salt to taste.
