1 1/4 cp splenda or other sugar substitute (or use 1 cp sugar)
2 tsp brown sugar
1 cp unsweetened applesauce
1 egg
2 tbsp milk
2 tsp vanilla
1 1/2 cp whole wheat flour
1 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger
3 cp Oats (quick or old fashioned)
1 cp diced dried mixed fruit or raisins

Beat sugars and applesauce until well blended. Add egg whites, milk and vanilla. Beat well. Add combined flour, baking soda, cinnamon, nutmeg and ginger; mix well. Add oats and dried fruit; mix well.

Dough will be moist – drop by rounded tbspfull onto cookie sheets. Press down to desired thickness and width (they will not spread out).

Bake @ 350 for 4 minutes, then turn cookie sheet to other side and bake another 4 minutes. Cool 1 minute on cookie sheets, remove to wire rack. Cool completely.
