1 tsp olive oil, divided

spinach
softened cream cheese
artichokes
1 tsp dijon mustard
2 slices bread
4 (1 oz) slices ham
4 slices tomato
2 slices cheddar/mozzarella/gruyere

Preheat broiler. Heat 1/2 tsp oil in an oven-proof skillet coated with cooking spray over medium-high heat. Add garlic; saute til lightly browned. Add spinach; cook 30 seconds, stirring constantly. Add with some chopped artichokes, small amount of cream cheese or sour cream. Mix into a light spread.

Spread mustard over bread. Heat 1/2 tsp oil in pan over med-high heat. Place bread, mustard side up in pan. Cook 30 seconds or til lightly browned. Remove from heat.

Arrange half of spinach mixture evenly over each slice of bread. Top with 2 slices ham, 2 slices tomato, and 1 slice cheese. Broil 1 1/2 minutes or until bubbly but not burned.
