1 cup fresh broccoli florets

3/4 cp sliced fresh mushrooms
1/4 cp diced red bell pepper
2 green onions, sliced thin
1 tbsp butter
1 cp diced cooked ham (or bacon)
8 large eggs
1/4 cp water
1/4 cp dijon mustard
1/4 tsp oregano
1/4 tsp basil
1 clove fresh garlic
1/2 tsp salt
1 1/2 cp shredded cheese

Preheat oven to 375. Grease a shallow 1 1/2 quart casserole dish. Saute all vegetables in the butter until cooked but not mushy. Remove from heat and stir in ham. Let cool slightly.

In a large bowl, whisk together eggs, water, mustard, oregano, basil, garlic and salt until well-combined. Stir in sauteed vegetables and cheese. Pour into prepared casserole dish and bake for about 25 minutes, until center is done.
