I made this soup the other night with homemade tortilla chips – it was AMAZING! You can kick up the spice if you or the kids like some more fire. A winner with everyone! (HINT – add rice and sour cream if it ends up too spicy for your kiddos :D)


3-4 large chicken breasts
1 can (I used the 28 ounces one) whole tomatoes, mashed
1 (10 ounce) can enchilada sauce (I just used tomato sauce since there are so many more spices in this soup!)
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers (I left these out as I knew it would be too spicy for my monkeys)
3 cloves garlic, minced
5 cups low sodium chicken stock
2 teaspoons cumin

2 teaspoons coriander (cumin and coriander are my absolute FAVOURITE blend of spices)
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
2 bay leaves
1 package frozen corn
1 tablespoon chopped fresh cilantro
tortilla chips (see below for recipe)
lime, if desired
sour cream, if desired

SOUP DIRECTIONS

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in chicken stock and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

Remove chicken from slow cooker and shred. Return to soup and stir until combined. Spoon into serving bowls and add a squeeze of lime and a dollop of sour cream, if desired. Sprinkle with crushed tortilla chips. Serves 6 plus LOTS of leftovers :0)


HOMEMADE TORTILLA CHIPS 


**(This recipe works best with already dry, stale pitas, but if they are still quite fresh, you can pop them in the oven at 350 degrees for 5-10 minutes or so to dry them out)**


Cut dry pitas in half and then into strips. Heat olive oil in a frying pan over medium heat, until it starts to smoke. 


Cook the pitas until they start to get a bit crispy (don’t cook them until they are completely crisp, or they’ll be overdone!).


Remove from pan and place on paper towel to absorb the excess oil.


Serve on the side or in your soup, or as a fantastic snack!
