A cookbook I got for a wedding shower gift – The New Canadian Basics Cookbook. I hardly ever use cookbooks, but I do have three that are my go-to books, and inside these books are some recipes which are just gold! This is one of them :0)

Lemon Squares

1/2 cup butter, softened
1/4 cup sugar
1 cup flour

2 eggs
1 cup sugar
2 tablespoon flour
1/2 teaspoon baking powder
1/4 teaspoon salt
grated rind of 1 lemon
3 tablespoons lemon juice
icing sugar for dusting

Base – Cream butter with sugar. Blend in flour until crumbly. Press into bottom of 8-inch square cake pan. Bake @ 350 for 15 minutes or until very lightly browned.

Topping – In bowl, beat eggs. Beat in sugar. Stir in flour, baking powder, salt, lemon rind and juice. 

Pour over base. Bake @ 350 for 25 minutes or until just set. Let cool. Dust with icing sugar and cut into small squares.
