Creamy Tomato Fettuccine

by MomLaur83 on March 27, 2012

Fettuccine is a very guilty pleasure. And there are plenty of fantastic recipes out there for the cream sauce that is lower fat. But sometimes, you just want a really yummy, creamy, tomato-y sauce. Enter – creamy tomato fettuccine!

Creamy Tomato Fettuccine

Ingredients

1 can tomato sauce

3 cloves garlic

1 tablespoon butter

2 teaspoons + olive oil

1/2 onion

salt and pepper

chili powder

half and half cream

fettuccine noodles

parmesan cheese

Heat butter and olive oil over medium heat. Add garlic and saute 1 minute.

Add another teaspoon olive oil, and the onions and saute until tender.

Pour in tomato sauce. Add salt and pepper to taste, and a tiny bit of chili powder.

Cook over med-low heat for 15-20 minutes, stirring occasionally to keep from burning.

Stir in cream (about 1/4-1/2 cup, depending on how creamy you want it to be).

Pour sauce over cooked fettuccine noodles. Sprinkle with parmesan and serve!

No kidding! The half and half doesn’t make it as thick as heavy cream, but it’s still as tasty!
