3 eggs
1 cp sugar
3/4 cp veg oil (or 1/4 cp oil and 1/2 cp apple sauce)
1 1/2 cp flour
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1/2 cp nuts, chopped (opt)
1/2 cp raisins (opt)
2+ cups carrots, grated

Mix eggs and sugar. Add oil/applesauce and mix well. Sift together flour, baking powder, soda, spices and nuts/raisins. Mix dry ingredients into wet. Fold in grated carrots. Bake in greased and floured bundt pan @ 300 for 1 hour. Cool 15 minutes before inverting onto cooling rack.

FROSTING:
1/4 cp melted butter
1 4 oz pkg cream cheese (light)
2+ cp icing sugar
2 tsp vanilla
1 tsp lemon juice

Mix well. Apply to cooled cake. Chill.
