We’ve declared the start of our week to be Muffin Mondays – it’s so nice to know every week we’ll be having muffins that day, so I’ve been gathering and trying all kinds of healthier muffin recipes to kick off our morning.

This pumpkin recipe is one from my aunt that we’ve made for YEARS. It’s delicious, absolutely everyone loves it, the kids have no idea it’s pumpkin (they’re not big fans ;D) AND it’s got great healthy ingredients in it!

Pumpkin Muffins

  • 3/4 cup bran
  • 3/4 cup whole wheat flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup raisins (optional)
  • 1 cup cooked pumpkin
  • 2 eggs (unbeaten)
  • 1/4 – 1/2 cup vegetable oil (can also substitute coconut oil or applesauce)
  • 1/2 cup plain yogurt or buttermilk

Combine bran, flour, sugar, cinnamon, powder, soda, salt and raisins. Toss to mix.

Add pumpkin, eggs, oil and yogurt. Stir til combined.

Spoon into paper-lined muffin tins. Bake @ 400 for 25 minutes.

And there you have it! A fantastic, delicious, healthy fall breakfast in under 30 minutes!
